Bean to bar is chocolate that is produced literally from bean to bar in the same facility. This artisanal product has become wildly popular the world over. Fabiann Rimann takes this to yet another level. Under the label ” Authentic Hand Made Chocolate ” he utilizes only sustainably grown beans making the highest quality bean to bar chocolate. Rimann buys his beans from Swiss company Felchlin, which is known for their high quality processes from planting through harvesting. As you can see in this video, Felchlin travels to the palntations frequently, asuring the quality. Because the beans for ” Authentic Hand Made Chocolate ” are bought in small quantities, varieties and aromas may vary, which makes each bar unique. Together with two engineers, Fabian Rimann spent two years developing his own machine to be able to make his very own unique chocolate from fresh beans. Over and over they tested and adjusted and fine tuned. Since September 2015 “Authentic Hand Made Chocolate ” is being sold at Rimann’s store in Wettingen, in bars, platelets, fruit chocolates and soon into grand-cru truffles.
